I’m not gonna lie, this Vegan Peppermint Magic Mocha Latte recipe is a blog that I wanted to post right before the holidays and not on the 18th of January. We all know how the holidays are – no intention of letting everything get hectic, but it usually gets at least somewhat that way at some point.
That’s life, and here we are ready to learn about a delicious Vegan Peppermint Magic Mocha Latte that can be made on the go, with the added bonus of a gorgeous view of Tennessee mountains. If you skip straight to the recipe, I won’t be mad (mostly because I won’t even know), but I would highly recommend peeping the photos.
This Hipcamp site was one that I’ve been eyeing for MONTHS. I even booked it at one point this past summer and had to cancel last minute for personal reasons. It was voted “Best View in Western North Carolina” (Not shocking) and is essentially a private version of Max Patch.

I’m going to keep it real, people.
It was COLD…..and I forgot my sleeping bag, a fact which I realized after we’d already left home. As noted in a previous blog about winter camping, there are certain camping essentials during colder months and this is definitely one of them. We arrived after dark, enjoyed a small campfire, then bundled up in the tent (Sean, Clarence and I). If not for the mouth breathing of Clarence, my sleeping bag liner, and sleeping pad, that somehow did get packed, I would have had to retreat to my vehicle and blast the heat. This has never happened to me before, and will likely never happen again as it wasn’t the best nights rest.
*for the record, Sean offered me his sleeping bag but I’m relentlessly hard-headed and bad at accepting help after my own mistakes*
The next morning we emerged from the frost covered tent to find a gorgeous sunrise peeking over the ridges filled with thick fog. If it looks magical, that’s because it was.
After making a little breakfast I got to work on some lattes.
Four Sigmatic, a badass company specializing in adaptogenic mushroom coffee blends, was kind enough to reach out and send me some of their product just prior to our trip. Their mushroom coffee is what makes this latte “magic”. No, they’re not that kind of mushroom, but the coffee is good and Chaga is proven to reduce inflammation and help with a slew of ailments.
This recipe is a spinoff on the classic peppermint mocha latte you might get during wintertime at a cafe for $6. Except its much better for you, is easily made on the go, and still tastes so good.
You can optionally make your own fresh peppermint simple syrup to use in multiple lattes and recipes (instructions are below), or you can opt to use peppermint extract. I won’t judge you either way.
PrintVegan Peppermint Magic Mocha Latte
- Yield: 1 1x
Ingredients
- 6 oz filtered water
- 4 oz non dairy milk (I used oat milk for the sake of froth)
- 1 serving Four Sigmatic Mushroom Coffee Mix with Lions Mane & Chaga (If you don’t want to use this or don’t have it on hand, feel free to modify with your favorite instant coffee)
- 1 tbsp cacao powder
- 1 tsp cacao butter (optional, but gives a lovely frothiness to the latte and tastes great)
- 1 tbsp peppermint simple syrup (you can optionally use peppermint extract, just make sure to cut the amount way down and taste it)
Instructions
- Combine hot water with Mushroom Coffee Mix, Cacao powder, Cacao butter, and mint simple syrup/peppermint extract in either a high-speed blender or a container that you can shake vigorously. I used the thermos from Four Sigmatic for shaking/blending and it didn’t spill a drop. Super impressed.
- Meanwhile, heat non-dairy milk in a sauce-pan (or in my, case camping stove) and froth with a battery operated frother or matcha whisk.
- Pour the Mushroom Coffee and Peppermint mix into a mug, followed by the frothed milk. Top with optional fresh mint.
