Description

A layered fruit, yogurt, and granola bowl that will get your taste buds going in the best way.


Ingredients

Units Scale

Granola

  • 4 c rolled oats (make sure to get GF oats if that’s something you need)
  • 1/2 c pepitas
  • 1/2 c raw pecans
  • 1/2 c raw cashews
  • 1 tsp sea salt
  • 1/2 tsp cinnamon*
  • 1/2 tsp cardamom*
  • 12 tsp turmeric powder (extra for sprinkling, if you’d like)*
  • 1/4 tsp ginger powder*
  • 1/2 c melted coconut oil
  • 1/2 c maple syrup/honey/agave
  • 1 tsp vanilla bean paste or vanilla extract

*if you have a large batch of golden milk mix you can omit the individual spices and 2-3 tsp. of the mix for an even richer depth of flavor, and ease.

Grilled Banana Bowl (per bowl)

  • 1 banana, peeled and cut in half longways
  • 1 granny smith apple (shredded (skin on or off))
  • 1 cup yogurt of choice


Instructions

Granola*

  1. *I highly recommend making the granola ahead of time to decrease the amount of time it takes to put this bowl together. Store the granola in an airtight container at room temperature for 1-2 weeks, or in a sealed freezer bag in the freezer for up to 3 months.
  2. Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper. In a large mixing bowl, combine the oats, pepitas, pecans, cashews, salt, cinnamon, cardamom, turmeric, and ginger. Stir to blend.
  3. Pour in the coconut oil, maple syrup, and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola into your prepared pan and use a large spoon or spatula to spread it in an even layer. Bake until golden, about 25 minutes, stirring halfway through. The granola will further crisp up as it cools.
  4. Let the granola cool completely, undisturbed, before breaking it into pieces.

Bowl assembly

  1. Grate the granny smith apple and place it in the bottom of your bowl.
  2. Heat either a medium sized skillet or a cast iron grill pan (my preference) to medium heat. Place bananas in the skillet and grill for 1-2 minutes per side, or until grill marks appear as in the photo. 
  3. Meanwhile, add yogurt and whatever amount of granola you’d like to the bowl (maybe a 1/2 cup or so) on top of the apple. Once your bananas are grilled up, place them on top. 

    Voila.

Notes

  • In addition to making the granola in advance, I recommend making a large batch of Golden Milk Mix beforehand – that way you can grab it out of your pantry for this recipe and so many others like pancakes, smoothies, and even my one-pot golden milk applesauce.
  • As of a 2024 update, I typically choose full fat greek yogurt as my yogurt of choice. Aside from it being delicious – turmeric is fat soluble, so eating this golden milk inspired granola bowl with a fattier yogurt is ideal. In the plant-based realm, this is delicious with cashew or coconut milk, but there are no rules.
